  • 50ml Cognac
  • 30ml Cointreau
  • ? tsp Angostura bitters

Ingredients (side dish)

  • 200g butternut squash
  • 2 Japanese purple yams (200g)
  • 150g mini red radish
  • 1 carrot (150g)
  • 3 tbsp extra virgin olive oil
  • 1 flat tbsp garlic salt with oregano and parsley
  • 1 sprig of rosemary


1. Rinse the chicken and pat dry with kitchen towel.

2. Placed the chicken over a wire rack, using a plate, and set within the fridge to dry to have an hour.

3. Tie the chicken legs plus a section of kitchen string.

4. Take one-third of the garlic salt and rub it on the cavity within the chicken.

5. Rub the remainder garlic salt on exterior surface of the chicken.

6. From a bowl, squeeze Dijon mustard, cognac, Cointreau and Angostura bitters. Mix well. (above)

7. Assemble the chicken in a resealable bag. Pour from the marinade, ensuring it covers the top of chicken. Seal the bag and leave the chicken to marinate overnight inside fridge.

8. Take out the chicken from your fridge 20 mins before roasting.

9. Preheat oven at 250 deg C for 15 minutes.

10. Place chicken for a wire rack designed into a baking tray.

11. Cover the wings with aluminium foil. (above)

12. Assemble the chicken from the oven to roast at 230 deg C for Ten minutes.

13. Turn high temperatures as a result of 180 deg C. Roast for One hour. Take away the foil within the wings.

14. Continue roasting Half-hour or until chicken is cooked through. To confirm, work with a skewer to pierce the chicken leg. In the event the juices run clear, the chicken ought to be done.

15. Remove the kitchen string before serving.

Method (side dish)

1. Peel and cut the butternut squash into large chunks (4cm wide).

2. Peel and cut okazaki, japan purple yams into large chunks ?(4cm wide).?3. Wash and dry the mini red radish.

4. Cut the carrot into large chunks ?(4cm wide).

5. Place everthing onto a baking tray.

6. Drizzle the added virgin essential olive oil and add the garlic salt.

7. Toss to distribute the oil and salt flakes.

8. Place a sprig of rosemary on the top. (above)

9. Set up the oven and roast for ?30 minutes.

10. Serve when using the roast chicken.
